Breakfast: banana, fruit, protein powder smoothie
Dinner: avocado and meat (thrilling)
Dessert: red pear
So! Tomorrow I plan on celebrating with WINE! I’ll probably write my closing thoughts on these 30 days while half in the can 😀
I am so ready to be done with this. I fear a backlash of wine Tuesday night and ALL THE FOOD on Wednesday. *sigh*
Breakfast was a strawberry, banana and protein powder smoothie.
That’s a habit that’ll probably stick.
I tried to use up leftover salad for lunch but it was disgusting. I ended up eating some of the snackie ginger snap cookies.
Dinner was a nacho salad: lettuce, red bell pepper, avocado, “meat” and onions. I made dressing out of cucumber, cilantro and a very unripe avocado (therefore added no flavor or creaminess). Oh and nutritional yeast.
I may have a pear later – but I doubt it.
Busy horse day! I packed some bananas and some snackies.
I got home and made some sorbet (frozen blueberries and strawberries in the ninja)
Then I made a huge batch of “meat” for TACOS!
And then I may or may not have eaten 4 meat sticks (meat on celery) 😛
The protein deficit is building – I can feel it.
Breakfast and dinner was a smoothie… everyone in the house is addicted to the Ninja 😀
Around 11a I was STARVING. My amazing husband came by my office with a treasure trove of raw snacks!
And I ate the hell out of it!!!
I started with these…
And then ate these. 😀
I felt like I was cheating but I wasn’t – although a binge of packaged products wasn’t exactly in the spirit of a raw vegan program. Oh well… I feel waaaay better.
Yeah. Still bored.
Banana, mixed berry and chia smoothie
I took myself to lunch at Plant and got an arugula, pink grapefruit, avocado, shaved fennel and macadamia nut salad with vinaigrette. It was nice to have my second meal made by someone else.
It was Back to School night so I just had another smoothie for dinner – banana and blueberry.
Another day down. I feel the protein deficit building. Planning on sausage soon.
Blueberry, banana and chia pudding for breakfast
Zucchini, tomato, creamy spinach pesto and chili flakes for lunch. I was still hungry so I went to the cafe.
Salad and a peach.
I just got home from the barn and I am too bored of food to eat. I did have some grapes.
Considering just fasting these last few days… too bored to think about the same damn food again.
I’d stab a hobo for a Tofurky sausage and french fries. And WINE.
Breakfast: blended mixed berries, banana and chia seeds with a side of grapes
Lunch: salad with spinach pesto
Dinner: bolognese with mushrooms
I am too far in to quit – and I’m too close to the end to give a flip.
Breakfast didn’t turn out much prettier but it was still delicious. Banana, mango and chia pudding….
Lunch was grated cauliflower and cabbage salad with creamy pesto.
Dinner was zucchini pasta bolognese… mmmmmm
I even had a little dessert – mixed berry sorbet (frozen berries blended in the ninja) with pecans.
Since it rained yesterday today was my busy busy day – taught a lesson and rode 3 horses.
Confession – I have NOT given up coffee. But I have cut down to 2-3 cups a day (from 8-12). Except today – I drank ALL THE COFFEES. Bzzzzz!!!!
Breakfast was a banana, mangoes and chia seeds that overnighted in the fridge.
Tasted amazing – looks like poop. I hand stirred in the chia today so tomorrow it will look way better 😉
When I got home at 5p I made some food ahead.
A giant vat of salad: grated cauliflower, Napa cabbage, scallions, cilantro, and red bell pepper.
I also made some creamy spinach pesto (soaked cashews, crushed garlic, spinach, salt and pepper.)
I put some pesto on the salad and had some tacos with the “meat” I made last night.
So I’m a little better prepared going into next week!
Day twenty?? How?!
Breakfast was another attempt at hiding my meh cheesecake experiment by drowning it in frozen fruit. Strawberries and mangoes today!
Lunch was zucchini pasta bolognese with mushrooms.
And here is a recipe – because it’s tasty…
* 1 package of Trader Joe’s sun dried tomatoes
* 1.5 cups walnuts
* 2 large Roma tomatoes
* crushed garlic, salt and pepper
Whir it up in a blender and voilà!
Dinner was similarly delicious and over the top rich and decadent – avocado soup.
Half a peeled cucumber, 2 small avocados, cilantro, scallions, salt and cumin – blend with water. Top with chopped red bell pepper and hot sauce. NOMS!
I also ate an obscene number of grapes today. We happened to get a bag of super crunchy ones 😀
